Cinnamon Toast Brunch
    Blue Bunny cinnamon ice cream sandwiched between 2 slices of maple french toast, drizzled with maple syrup and dusted with powdered sugar and cinnamon.
Ingredients
Sandwich
- 2 slices maple French toast, subrecipe
 - 1 each Blue Bunny Cinnamon Ice Cream, pre-cut square 3 ½”x4"x1"
 - 2 tsp maple syrup
 - as needed powdered sugar
 - as needed cinnamon, ground
 
Maple French Toast
- 3 each eggs
 - ¼ cup heavy cream
 - ¼ tsp cinnamon, ground
 - 3 Tbsp maple syrup
 - ½ Tbsp butter, unsalted
 - 6 slices brioche
 
Instructions
Sandwich
- Heat maple French toast in microwave for 10-15 seconds.
 - Add layer of ice cream between two pieces of French toast.
 - Cut sandwich in half on the bias and stack artfully on plate.
 - Drizzle with maple syrup.
 - Dust with powdered sugar and ground cinnamon.
 
Maple French Toast
- In a medium sized work bowl, whisk together eggs, cream, cinnamon, and maple syrup. Makes 3 servings.
