Cinnamon Toast Brunch

Blue Bunny cinnamon ice cream sandwiched between 2 slices of maple french toast, drizzled with maple syrup and dusted with powdered sugar and cinnamon.


Ingredients

Sandwich

  • 2 slices maple French toast, subrecipe
  • 1 each Blue Bunny Cinnamon Ice Cream, pre-cut square 3 ½”x4"x1"
  • 2 tsp maple syrup
  • as needed powdered sugar
  • as needed cinnamon, ground

Maple French Toast

  • 3 each eggs
  • ¼ cup heavy cream
  • ¼ tsp cinnamon, ground
  • 3 Tbsp maple syrup
  • ½ Tbsp butter, unsalted
  • 6 slices brioche

Instructions

Sandwich

  1. Heat maple French toast in microwave for 10-15 seconds.
  2. Add layer of ice cream between two pieces of French toast.
  3. Cut sandwich in half on the bias and stack artfully on plate.
  4. Drizzle with maple syrup.
  5. Dust with powdered sugar and ground cinnamon.

Maple French Toast

  1. In a medium sized work bowl, whisk together eggs, cream, cinnamon, and maple syrup. Makes 3 servings.
